選購蘆筍,以形狀正直、筍尖花苞緊密、沒有水傷腐臭味,表皮鮮亮不萎縮,細嫩粗大,基部未老化,以手摺之 ,即斷者為佳。剛採收下來的蘆筍組織很快就會纖維化,不易儲存。
